What are citrus fruits

Along with other citrus fruits, citrons were first introduced on the banks of Lake Garda by the Franciscan friars around the 14th century. It was here, on the 46th parallel north, that these crops found the ideal conditions for their growth and the fertile soil for the start of a tradition: that of the grocers who used to distil the peel to valorise its properties. Cedrata Tassoni Soda was originally made from the Citrus Medica citrons grown on the shores of Lake Garda but today Cedrata Tassoni is a product containing nothing but natural aromas extracted from the highest quality citrons of the “Diamante” variety, ripened in the sun of Calabria and sourced directly from the producer.

Cedral Tassoni is known worldwide as one of the few industrial enterprises producing most of its own aromas, starting from Italian citrons, while constantly and attentively monitoring the entire production chain in order to guarantee the high quality of its products.

How to handle the Italian citron: the peelong machine

After being hand picked and carefully selected, the citrons are delivered to the production plant and peeled. The peel is placed in a hydroalcoholic infusion while the peeled fruit is destined for use in the food industry.
